Maple Cheesecake

Try this delicious cheesecake next time you're craving something sweet! Serves 12.

Ingredients:

Crust:

  • 1/4 cup sugar (preferably maple)
  • 2 cups crushed graham crackers (about 1/2 pound)
  • 1 1/4 sticks butter, melted

Filling:

  • 1 pound cream cheese
  • 3/4 cup Pure Mathison's Maple Syrup
  • 1 cup sour cream
  • 1 tbsp flour
  • 6 eggs separated
  • 6 tbsp sugar (preferably maple)

 

Directions:

Preheat the oven to 350°F (175°C). Combine the sugar and graham cracker crumbs in a bowl. Add the melted butter and mix until evenly combined. Press the mixture firmly into a 10-inch springform pan and bake for 10 minutes.

In a large bowl, beat together the cream cheese, maple syrup, sour cream, flour, and egg yolks until smooth. A food processor may be used for this step. In a separate bowl, whip the egg whites until soft peaks form. Gradually add the sugar and continue beating until stiff peaks develop.

Gently fold the maple cream cheese mixture. Pour the filling over the prepared crust and spread evenly. Bake for 1 hour and 10 minutes.

When baking is complete, turn off the oven and leave the cheesecake inside with the door slightly open for about 45 minutes. Transfer to a countertop and allow it to cool completely. Refrigerate for at least 1 hour before removing it from the pan.
