Mathison's Maple Pulled Pork

Mathison's delicious Maple Pulled Pork good for 4 servings.

Ingredients:

  • 3/4 to 1 pound pork tenderloin
  • 1 tbsp chopped hot pepper, fresh or canned
  • 2/3 cup chopped onion
  • 2 tsp oil of your choice
  • 1 tbsp chopped garlic
  • 1/2 cup ketchup
  • 1/2 cup of your favourite barbecue sauce
  • 1/4 cup Pure Mathison's Maple Syrup
  • 1/4 cup apple cider vinegar
  • 1/4 tsp hot pepper sauce
  • 1/4 tsp ground black pepper
  • 4 buns

 

Directions:

Heat oil in a saucepan over medium heat. Add hot pepper and onion, cooking until translucent. Stir in the garlic and cook for 1 minute more. Add the ketchup, vinegar, maple syrup, and barbecue sauce, then let simmer for 10 minutes.

Preheat the oven to 350°F (175°C). Sear the pork tenderloin on all sides until browned, about 10 minutes. Remove from the heat and season with black pepper and the red pepper sauce.

Place the tenderloin on a double layer of heavy-duty aluminum foil and cover it with half of the sauce. Wrap the foil tightly, place it in a baking pan, and bake for 45 minutes.

Remove the pork from the oven and shred it using two forks. Transfer the shredded pork to a saucepan with the remaining sauce and heat gently. Serve on buns.
