Mathison's Maple Baked Beans

Delicious maple baked beans that will have everyone asking for the recipe! Serves 10+
Ingredients:
- 2 lbs dried beans, yellow eye, navy, or other
- 1/2 lb lean salt pork (optional)
- 1/2 tsp baking soda
- 1 tsp salt
- 1 tsp dry mustard
- 1 medium-sized onion, peeled
- 1 1/2 cups Pure Mathison's Maple Syrup
Directions:
Rinse the beans thoroughly and soak them overnight in cold water with a small amount of baking soda in a covered container. The next morning, drain and rinse the beans, then simmer them in fresh water until the skins begin to wrinkle. Drain the bean water into a separate container.
Preheat the oven to 325°F (163°C). Place the onion in the bottom of the bean pot. Add the beans and remaining ingredients, then score the pork and place it on top. Pour in enough liquid to just cover the beans.
Cover and bake for approximately 8 hours, checking occasionally and adding more liquid as needed to keep the beans moist. For the last hour remove the lid to allow the top to brown.
